- 2 cups broccoli florets

- Halve the spaghetti squash lengthwise and scoop out seeds. Drizzle with olive oil and place cut-side down on a baking sheet.

- Roast for about 30 minutes until squash is fork-tender and broccoli is lightly browned.
- Scrape out spaghetti strands into a bowl, then mix with roasted broccoli, Alfredo sauce, and half of the mozzarella.
