  • 2 tablespoons butter, softened
  • 8 slices of cheese (sharp cheddar or your favorite)
  • 6 slices of bacon
  • 2 large onions, thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon brown sugar
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced onions and sprinkle with salt. Cook until translucent (5-7 minutes).
  2. Stir in brown sugar and balsamic vinegar, lower heat, and cook until deeply caramelized (15-20 minutes). Set aside.
  3. In another skillet, cook bacon over medium heat until crispy. Drain on paper towels.
  4. Preheat a griddle or nonstick skillet over medium-low heat. Butter one side of each bread slice.
  5. Assemble sandwiches: layer cheese on each slice of bread, add caramelized onions and bacon, top with more cheese, then another slice of bread (buttered side up).
  6. Grill each sandwich until golden brown and crispy (3-4 minutes per side). Let rest for one minute before slicing.
