- 4 cups broccoli florets
- 1/2 cup extra virgin olive oil
- 1/4 tsp salt
- 1/2 tsp fresh cracked black pepper
- 8 oz brick of feta cheese
- 1 tbsp lemon juice
- 2 tbsp lemon zest
- 2 tbsp fresh chopped basil
Instructions
- Preheat the oven to 400°F (200°C). Cut broccoli into quarters and place in a baking dish. Drizzle with olive oil, salt, and pepper; toss to coat. Create space in the center for the feta and drizzle it with oil and more pepper.
- Bake for 35 minutes until the broccoli is tender and the feta is melted. Meanwhile, cook pasta according to package instructions, reserving 1/2 cup of pasta water before draining.
- Once baking is complete, stir the roasted broccoli and feta together until combined. Add reserved pasta water as needed for creaminess, then mix in cooked pasta along with lemon juice, lemon zest, and basil.
