- 1.5 lbs baby potatoes, halved
- 3 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 200 g block feta cheese
- 1 cup cherry tomatoes, halved
- Fresh basil or parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, toss halved baby potatoes with olive oil, oregano, garlic powder, salt, and black pepper until well coated.
