  • 1.5 lbs baby potatoes, halved
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 200 g block feta cheese
  • 1 cup cherry tomatoes, halved
  • Fresh basil or parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss halved baby potatoes with olive oil, oregano, garlic powder, salt, and black pepper until well coated.
  3. Spread the seasoned potatoes on the baking sheet, placing the block of feta cheese in the center. Scatter cherry tomatoes around the potatoes.
  4. Bake for 25–30 minutes until the potatoes are tender and golden brown.
  5. Remove from the oven and use a fork to mash the baked feta slightly. Mix it with the potatoes and tomatoes for added flavor.
