- 24 oz cream cheese, softened
- ¾ cup granulated sugar
- 3 large eggs
- ½ cup sour cream or Greek yogurt
- 1 tsp vanilla extract
Instructions
- Preheat oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, sugar (if using), and melted butter until combined. Press into the bottom of a springform pan and bake for 8–10 minutes until golden brown.
- In a large bowl, beat softened cream cheese until smooth. Gradually mix in sugar. Add eggs one at a time, mixing well. Stir in sour cream, vanilla extract, and mashed bananas until just blended.
- Pour filling into the cooled crust. Bake in a water bath for 60–70 minutes until edges are set but center jiggles slightly. Turn off oven and let cool inside with the door cracked open for about an hour.
- Chill in the refrigerator for at least 4 hours or overnight before serving. Top with fresh banana slices and whipped cream just before serving.
