  • 24 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • ½ cup sour cream or Greek yogurt
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, sugar (if using), and melted butter until combined. Press into the bottom of a springform pan and bake for 8–10 minutes until golden brown.
  2. In a large bowl, beat softened cream cheese until smooth. Gradually mix in sugar. Add eggs one at a time, mixing well. Stir in sour cream, vanilla extract, and mashed bananas until just blended.
  3. Pour filling into the cooled crust. Bake in a water bath for 60–70 minutes until edges are set but center jiggles slightly. Turn off oven and let cool inside with the door cracked open for about an hour.
  4. Chill in the refrigerator for at least 4 hours or overnight before serving. Top with fresh banana slices and whipped cream just before serving.
