  • 250 g digestive or graham crackers
  • 75 g butter
  • 300 g fresh blueberries
  • 800 g full-fat cream cheese (room temperature)
  • 260 g granulated sugar
  • 4 large eggs
  • 200 g sour cream
  • 1 tbsp granulated sugar
  • 1 tbsp all-purpose flour
  • 2 tsp lemon juice
  • 110 g all-purpose flour
  • 80 g dark brown sugar
  • 70 g butter
  • 1 1/2 tbsp cornstarch
  • 2 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 180°C (350°F). Crush the digestive or graham crackers into fine crumbs and mix with melted butter. Press firmly into a springform pan to form the crust.
  2. Toss fresh blueberries with sugar, flour, and lemon juice; set aside.
  3. Beat cream cheese until smooth. Gradually add sugar, sour cream, cornstarch, vanilla extract, and eggs; mix until just combined.
  4. Pour half of the cheesecake filling over the crust, top with blueberries, then add remaining filling.
  5. Bake for about 85 minutes until edges are set but center is slightly wobbly. Let cool in the oven for an hour before refrigerating for at least four hours.
