- 12 Hawaiian sweet rolls
- 1 pound thick-cut bacon
- 12 large eggs
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup milk
- 2 tablespoons butter (melted)
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Arrange bacon in a single layer and bake for 15–20 minutes until crispy. Drain on paper towels.
- Whisk together eggs and milk in a large bowl; season with salt and pepper. Melt 1 tablespoon of butter in a non-stick skillet over medium heat, pour in egg mixture, and cook until set but moist. Stir in cheeses.
- Preheat oven to 350°F (175°C). Slice rolls horizontally and place the bottom half in a baking dish. Spread egg mixture over the rolls, sprinkle crumbled bacon on top, then place the top half of the rolls over everything.
- Mix melted butter, Dijon mustard, and garlic powder; brush on top of the rolls.
- Cover with foil and bake for 15 minutes; remove foil and bake for another 5–10 minutes until golden brown.
- Let cool for a few minutes before slicing into individual portions.
