  • 12 Hawaiian sweet rolls
  • 1 pound thick-cut bacon
  • 12 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup milk
  • 2 tablespoons butter (melted)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Arrange bacon in a single layer and bake for 15–20 minutes until crispy. Drain on paper towels.
  2. Whisk together eggs and milk in a large bowl; season with salt and pepper. Melt 1 tablespoon of butter in a non-stick skillet over medium heat, pour in egg mixture, and cook until set but moist. Stir in cheeses.
  3. Preheat oven to 350°F (175°C). Slice rolls horizontally and place the bottom half in a baking dish. Spread egg mixture over the rolls, sprinkle crumbled bacon on top, then place the top half of the rolls over everything.
  4. Mix melted butter, Dijon mustard, and garlic powder; brush on top of the rolls.
  5. Cover with foil and bake for 15 minutes; remove foil and bake for another 5–10 minutes until golden brown.
  6. Let cool for a few minutes before slicing into individual portions.
