  • 6 boneless center-cut pork chops
  • 1 1/2 cups buttermilk
  • 2 cups Panko crumbs
  • 1/3 cup all-purpose flour
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 3 tablespoons olive oil
  • 2/3 cup chicken broth
  • 2 tablespoons freshly grated Parmesan cheese

Instructions

  1. Marinate pork chops in buttermilk in a large ziptop bag for at least 2 hours (up to 24 hours).
  2. Preheat oven to 325°F.
  3. Mix Panko crumbs, flour, Parmesan cheese, garlic powder, salt, pepper, and paprika in a bowl.
  4. Remove pork chops from marinade; season lightly with salt and pepper.
  5. Coat each chop thoroughly in the Panko mixture.
  6. Heat olive oil in an oven-proof skillet over medium-high heat and sear pork chops until golden brown on both sides (about 2-3 minutes per side).
  7. Add chicken broth and sprinkle additional Parmesan on top of each chop.
  8. Transfer skillet to the oven and bake for about 20 minutes or until internal temperature reaches 145°F.
