- 4 cups chicken broth
- 4 ounces cream cheese
- 5 cups heavy cream
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 jalapeño, sliced
- 2 tablespoons Cajun seasoning
Instructions
- Season the chicken with salt, pepper, and 1 tablespoon of Cajun seasoning. Heat olive oil in a Dutch oven over medium heat and sear the chicken until golden brown. Remove and shred once cooled.
- In the same pot, sauté chopped onion, minced garlic, diced bell pepper, and sliced jalapeño until softened.
- Add chicken broth and white beans along with remaining Cajun seasoning; stir to combine.
- Return shredded chicken to the pot and simmer for 20–30 minutes on low heat.
- Stir in cream cheese until melted; gradually add heavy cream while stirring until smooth.
- Finish with lime juice and adjust seasoning with salt and pepper as needed before serving.
