  • 1/4 cup white wine (or vinegar)
  • Oil for frying
  • 1 cup ricotta cheese (drained)
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a bowl, mix flour, sugar, cinnamon, and salt.
  2. Add softened butter, egg yolk, and wine; mix until dough forms.
  3. Knead on a floured surface for 5 minutes; wrap and rest for 30 minutes.
  4. Roll out dough to 1/8 inch thick; cut into 3-inch circles.
  5. Heat oil to 350°F (175°C) in a skillet.
  6. Wrap circles around cannoli tubes; seal edges with water.
  7. Fry until golden brown (2–3 minutes); drain on paper towels.
  8. For filling, mix ricotta, powdered sugar, vanilla, and cinnamon until smooth.
  9. Fill shells just before serving and dust with powdered sugar.
