  • 1/2 cup brown sugar
  • 3 tbsp butter
  • 1/3 cup brown sugar
  • 2 tbsp butter
  • 2 tbsp dark rum
  • 1 tsp cornstarch (optional, for thickening)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine graham cracker crumbs, sugar, and melted butter; press into a springform pan and bake for 8 minutes.
  3. Beat cream cheese until smooth; add sugar, eggs one at a time, sour cream, and vanilla.
  4. Pour filling over crust and bake at 325°F (163°C) for 55-65 minutes. Cool in the oven for an hour.
  5. Refrigerate for at least 4 hours.
  6. In a skillet, melt butter and brown sugar; add banana slices and cook until golden.
  7. Prepare rum glaze by melting butter with brown sugar and dark rum in a saucepan; simmer briefly.
  8. Top cheesecake with bananas and drizzle with warm rum glaze before serving.
