  • 10 ounces matchstick carrots
  • 1/3 cup mayonnaise
  • 1/3 cup plain yogurt
  • 2 tablespoons honey
  • 2 teaspoons rice wine vinegar
  • Salt & freshly ground black pepper, to taste
  • 3/4 cup crumbled feta cheese
  • 1/2 cup dried sweetened cranberries

Instructions

  1. Core and slice both apples into matchsticks, tossing them with lemon juice in a large bowl.
  2. Add matchstick carrots to the apples and mix well.
  3. In a small bowl, whisk together mayonnaise, yogurt, honey, vinegar, salt, and pepper until smooth.
  4. Pour the dressing over the apple-carrot mixture and stir until fully coated.
  5. Gently fold in crumbled feta cheese and dried cranberries.
  6. Chill for at least 30 minutes before serving to enhance flavors.
