Description

  • 12 medium-large cremini mushrooms
  • 1 tablespoon unsalted butter
  • 2 cloves garlic
  • 2.53 cups fresh baby spinach
  • 4 ounces cream cheese
  • 1/4 cup freshly grated parmesan cheese
  • Panko breadcrumbs (optional)

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. Clean mushrooms and remove stems; place caps on the baking sheet.
  3. In a skillet, melt butter over medium heat. Sauté minced mushroom stems and garlic for 2-3 minutes.
  4. Add spinach and cook until wilted. Stir in cream cheese, basil, salt, pepper, and red pepper flakes; fold in parmesan.
  5. Spoon filling into mushroom caps and sprinkle with panko (if using).
  6. Bake for 15 minutes until golden and hot.
