- 12 medium-large cremini mushrooms
- 1 tablespoon unsalted butter
- 2 cloves garlic
- 2.5–3 cups fresh baby spinach
- 4 ounces cream cheese
- 1/4 cup freshly grated parmesan cheese
- Panko breadcrumbs (optional)
Instructions
- Preheat oven to 375°F and line a baking sheet with parchment paper.
- Clean mushrooms and remove stems; place caps on the baking sheet.
- In a skillet, melt butter over medium heat. Sauté minced mushroom stems and garlic for 2-3 minutes.
- Add spinach and cook until wilted. Stir in cream cheese, basil, salt, pepper, and red pepper flakes; fold in parmesan.
- Spoon filling into mushroom caps and sprinkle with panko (if using).
- Bake for 15 minutes until golden and hot.
