Ingredients
- 4 cups cooked sushi rice
- 1/2 pound boneless skinless chicken (drumsticks recommended)
- 2 teaspoons soy sauce
- 1 tablespoon sake (or water)
- 1/4 teaspoon baking soda
- 1 teaspoon cornstarch
- 1 ½ tablespoons soy sauce
- 1 tablespoon mirin
- 1 tablespoon brown sugar
- 1 tablespoon oil
- 1 tablespoon minced garlic
- 1/2 teaspoon salt
- 2 tablespoons furikake (optional)
- 1 sheet nori (cut into small rectangles)
Instructions
- Prepare sushi rice by mixing cooked rice with salt and furikake.
- Marinate chopped chicken with soy sauce, sake, baking soda, and cornstarch for 30 minutes.
- Combine soy sauce, mirin, and brown sugar to make teriyaki sauce.
- Cook marinated chicken in oil until done, then add garlic and teriyaki sauce until thickened.
- Shape onigiri by wetting hands, scooping rice into palm, adding filling, and forming triangles. Wrap with nori.
