  • 2 cups cooked chicken breast, chopped or shredded
  • 4 cups fresh spinach
  • 2 cups mushrooms, sliced
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, grated
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch casserole dish.
  2. In a skillet over medium heat, sauté onions and mushrooms in olive oil for 5-7 minutes until softened. Add garlic and cook an additional minute before stirring in spinach until wilted. Season with salt, pepper, and Italian seasoning.
  3. Layer cooked chicken in the casserole dish followed by the sautéed vegetables.
  4. Pour heavy cream over the top and sprinkle with mozzarella and parmesan cheese.
  5. Bake uncovered for 20-25 minutes until cheese is melted and golden brown.
  6. Allow to rest for 5 minutes before serving.
