  • 1 tub (8 oz) whipped topping, thawed
  • 24 tablespoons hot fudge
  • 3 eggs, room temperature
  • 1 1/2 cups plus 1 tablespoon sugar, white granulated
  • 2 1/4 cups flour, all-purpose
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 3/4 cup plus 1 tablespoon unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 1/4 cups mayonnaise
  • 1/3 cup brewed coffee
  • 1 cup hot water
  • 1 container (6 oz) fresh raspberries
  • 2 tablespoons sugar

Instructions

  1. Preheat oven to 350°F and prepare a baking sheet pan with non-stick spray.
  2. In a large bowl, beat eggs and sugar until light and fluffy.
  3. In another bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  4. Gradually mix dry ingredients into the egg mixture while adding mayonnaise.
  5. Stir in hot water and brewed coffee until well blended.
  6. Spread batter evenly in the pan and bake for 15-20 minutes until a toothpick comes out clean. Allow cooling completely.
  7. Prepare raspberry jam by cooking fresh raspberries with sugar until thickened; let cool.
