  • 1 teaspoon Turmeric
  • 6 cups Vegetable Broth
  • 1 cup Lentils
  • 1 can Chickpeas
  • 1 cup Navy Beans
  • 1 cup Kidney Beans
  • 8 ounces Persian Noodles or Linguine
  • 2 cups Spinach
  • 1 cup Cilantro
  • 1 cup Parsley
  • 1 cup Dill
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Instructions

  1. In a large pot over medium heat, sauté chopped onion in olive oil until translucent. Add minced garlic and turmeric; cook until fragrant.
  2. Stir in lentils, chickpeas, navy beans, kidney beans, and vegetable broth. Bring to a boil; then reduce heat to simmer for about 20 minutes until lentils are tender.
  3. Add noodles to the pot and cook according to package instructions until tender.
  4. Mix in spinach and fresh herbs; season with salt and pepper. Cook briefly until greens are wilted.
