  • 2 tbsp unsalted butter
  • ½ cup onion, finely chopped
  • ½ cup celery, finely chopped

  • 2 tbsp tomato paste
  • 1 tsp Old Bay seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp cayenne pepper (optional)
  • 2 tbsp all-purpose flour
  • 2 cups seafood or chicken broth
  • 1 ½ cups heavy cream
  • 1 tbsp Worcestershire sauce
  • 1 tbsp lemon juice
  • 1 tsp fresh thyme (or ½ tsp dried)

Instructions

  1. In a large pot over medium heat, melt butter and sauté onions, celery, and garlic until softened (3–4 minutes).
  2. Stir in tomato paste, Old Bay seasoning, salt, black pepper, and cayenne pepper; cook for another 1–2 minutes.
  3. Sprinkle flour into the mixture while stirring continuously to create a roux; cook for about 1 minute.
  4. Gradually add the broth while stirring; bring to a simmer and cook for 10 minutes.
  5. Lower heat and mix in heavy cream along with Worcestershire sauce, lemon juice, and thyme; simmer gently for another 5 minutes.
  6. Fold in the lump crab meat and heat through on low for an additional 2–3 minutes.
  7. Adjust seasonings as needed and serve hot with crusty bread.
