  • 1 onion (diced)
  • 1 carrot (diced)
  • 3 celery stalks (diced)
  • 3 garlic cloves (minced)
  • 12 oz chicken breast (cut into pieces)
  • 6.5 cups chicken stock
  • 0.75 cup orzo
  • Juice from 1.5 lemons
  • 2 egg yolks
  • Fresh dill and oregano

Instructions

  1. Heat olive oil in a large pot over medium heat; sauté onion, carrot, celery for about 5 minutes.
  2. Add garlic and cook for another minute before introducing the chicken; brown for about 7-10 minutes.
  3. Pour in chicken stock and bring to a boil; add orzo and simmer for about 15 minutes until cooked.
  4. Remove from heat; temper egg yolks with hot soup before mixing back into the pot along with lemon juice, dill, and oregano.
  5. Season to taste with salt and pepper; serve hot.
