- 2 tablespoons olive oil
- 1 pound ground Italian sausage (or vegan sausage)
- 1 large white onion
- 6 cloves garlic
- 4 cups vegetable broth
- 5 fresh sage leaves
- 2 carrots
- 1.5 pounds sweet potato
- 1.5 teaspoons smoked paprika
- 1 can white beans (15 ounces)
- 1 can full-fat coconut milk (15 ounces)
- 2 large handfuls of fresh kale
Instructions
- Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Brown the sausage until cooked through, then set aside.
- In the same pot, add another tablespoon of olive oil and sauté diced onion for about 5 minutes until softened. Add minced garlic and cook for an additional minute.
- Pour in vegetable broth, sage leaves, sliced carrots, diced sweet potato, smoked paprika, and half of the cooked sausage. Simmer for about 15 minutes until sweet potatoes are tender.
- Stir in coconut milk and chopped kale; cook for another 1-2 minutes until kale is wilted.
- Remove sage leaves before serving and garnish with remaining sausage and your choice of toppings.
