- 1 cup cornflakes
- ½ cup all-purpose flour
- 2 eggs
- 4 bread rolls
- 1 avocado
- ½ cup cilantro
- 3 Tbsp lime juice
- ½ cup sour cream
Instructions
- Make the sauce by blending olive oil, avocado, cilantro, adobo sauce, lime juice, honey, and sour cream until smooth. Refrigerate.
- Prepare the cucumber salad by mixing mayonnaise, apple cider vinegar, honey, garlic powder, and red pepper flakes; add cucumbers and toss well.
- Set up three shallow bowls for dredging: mix flour with spices in one bowl, beaten eggs in another, and crushed cornflakes in the last.
- Dredge each chicken piece in flour, then egg, and coat with cornflakes.
- Cook the chicken in an air fryer at 360ºF for 14-16 minutes or bake at 425ºF for 15-20 minutes until golden brown.
