Description

Crispy Cilantro Lime Chicken Sandwich is a delightful fusion of crunch and zest, featuring tender chicken breasts coated in a crispy cornflake crust, paired with a vibrant cilantro-lime sauce.   • 2 chicken breasts
  • 1 cup cornflakes
  • ½ cup all-purpose flour
  • 2 eggs
  • 4 bread rolls
  • 1 avocado
  • ½ cup cilantro
  • 3 Tbsp lime juice
  • ½ cup sour cream

Instructions

  1. Make the sauce by blending olive oil, avocado, cilantro, adobo sauce, lime juice, honey, and sour cream until smooth. Refrigerate.
  2. Prepare the cucumber salad by mixing mayonnaise, apple cider vinegar, honey, garlic powder, and red pepper flakes; add cucumbers and toss well.
  3. Set up three shallow bowls for dredging: mix flour with spices in one bowl, beaten eggs in another, and crushed cornflakes in the last.
  4. Dredge each chicken piece in flour, then egg, and coat with cornflakes.
  5. Cook the chicken in an air fryer at 360ºF for 14-16 minutes or bake at 425ºF for 15-20 minutes until golden brown.
  6. Combine avocado oil with sauce ingredients in a skillet over medium heat to make a coating sauce.
  7. Assemble sandwiches by placing chicken on rolls, adding salad and sauce.
