  • 600 g potatoes (about 4 medium), peeled and grated
  • 80 g mozzarella cheese, grated
  • 2 large eggs
  • 150 g baby spinach
  • 200 g champignon mushrooms, sliced
  • 100 g mozzarella fior di latte, torn into pieces
  • 30 g Parmesan cheese, grated

Instructions

  1. Preheat the oven to 180°C (350°F). In a mixing bowl, combine grated potatoes with salt, pepper, oregano, eggs, parsley, and mozzarella cheese.
  2. Press the potato mixture into a baking dish to form a compact crust.
  3. In a skillet over medium heat, sauté chopped green onion in olive oil until translucent. Add garlic and mushrooms; cook until soft. Stir in spinach until wilted; season with salt and pepper.
  4. Spread the filling over the potato crust and top with mozzarella fior di latte and Parmesan cheese.
  5. Bake for approximately 55 minutes or until golden brown on top. Let cool slightly before serving.
