  • 1 cup uncooked small pasta (ditalini or elbow macaroni)
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Seasonings: dried basil, dried oregano, crushed red pepper flakes (optional), salt, pepper

Instructions

  1. Prepare your ingredients by dicing the onion and mincing the garlic.
  2. In your slow cooker, combine chicken, onion, garlic, crushed tomatoes, chicken broth, basil, oregano, red pepper flakes (if using), salt, and pepper.
  3. Cover and cook on low for 6–7 hours or high for 3–4 hours until the chicken is tender.
  4. Remove the chicken and shred it with two forks before returning it to the soup.
  5. Stir in uncooked pasta and cook on high for an additional 15–20 minutes until al dente.
  6. Mix in grated Parmesan and mozzarella until melted. Serve garnished with fresh basil.
