  • 1 can (14 ounces) coconut milk
  • 4 cups chicken broth
  • 1 cup chopped carrots
  • 1 cup chopped bell peppers (red or yellow)
  • 1 cup snap peas or green beans
  • 2 tablespoons red curry paste
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon fish sauce
  • 2 tablespoons lime juice

Instructions

  1. Place chicken breasts at the bottom of the crockpot.
  2. Sprinkle minced garlic and ginger over the chicken.
  3. Layer chopped carrots, bell peppers, and snap peas on top.
  4. Pour in coconut milk and chicken broth.
  5. Stir in red curry paste and fish sauce until well combined.
  6. Season with salt and pepper to taste.
  7. Cover and cook on low for 4-6 hours or high for 2-3 hours until chicken is tender.
  8. Shred the chicken with two forks about 30 minutes before serving and stir back into the soup.
