- 8 small tortillas
- 1 cup shredded mozzarella or Monterey Jack cheese
- 1 cup shredded cabbage
- ½ cup chopped dill pickles
- ½ cup cottage cheese
- 1 tsp garlic powder
- 1 tsp paprika
- Ranch seasoning
Instructions
- In a mixing bowl, combine ground chicken with garlic powder, paprika, salt, and pepper. Form into 8 equal balls.
- Heat a skillet over medium heat. Add one tortilla at a time and sprinkle cheese on top before placing the chicken ball.
- Flatten the chicken ball gently with a spatula and cook for about 2 minutes until the cheese melts.
- Flip the taco to cook the chicken side for an additional 3–4 minutes until golden brown.
- In another bowl, mix cabbage, dill pickles, and pickle brine for slaw.
- Blend cottage cheese with ranch seasoning and lemon juice for the drizzle.
- Assemble tacos by adding slaw on top of the chicken and drizzling with ranch sauce.
