Easy Baked Salmon Sushi Cups are the perfect fusion of traditional sushi flavors in a fun, bite-sized package. These delightful treats combine tender salmon, seasoned sushi rice, and crispy nori sheets, all baked to perfection.


Ingredients

  • 1 lb salmon (cubed)
  • 1 ½ cups uncooked sushi rice
  • 3 large nori sheets
  • 1 tbsp light soy sauce
  • 1 tbsp Kewpie mayo
  • 1 tbsp sriracha
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 2 tsp white sugar
  • furikake, for garnish
  • 1 green onion, for garnish
  • cooking spray

Instructions

  1. Cook sushi rice according to package instructions until fluffy.
  2. In a microwave-safe bowl, mix rice vinegar and sugar; heat until sugar dissolves and pour over rice.
  3. Preheat oven to 400°F (200°C).
  4. In a mixing bowl, combine cubed salmon with soy sauce, Kewpie mayo, sriracha, and sesame oil.
  5. Cut nori sheets into squares that fit muffin tins. Lightly grease muffin tins.
  6. Layer sushi rice in each nori square, pressing down gently to form cups. Top with the salmon mixture.
  7. Bake for 15 minutes or until salmon is cooked through and tops are golden brown.
  8. Garnish with furikake and green onions before serving.
