Easy Baked Salmon Sushi Cups are the perfect fusion of traditional sushi flavors in a fun, bite-sized package. These delightful treats combine tender salmon, seasoned sushi rice, and crispy nori sheets, all baked to perfection.

- 1 lb salmon (cubed)
- 1 ½ cups uncooked sushi rice
- 3 large nori sheets
- 1 tbsp light soy sauce
- 1 tbsp Kewpie mayo
- 1 tbsp sriracha
- 1 tsp sesame oil
- 1 tbsp rice vinegar
- 2 tsp white sugar
- furikake, for garnish
- 1 green onion, for garnish

Instructions
- Cook sushi rice according to package instructions until fluffy.
- In a microwave-safe bowl, mix rice vinegar and sugar; heat until sugar dissolves and pour over rice.
- Preheat oven to 400°F (200°C).
- In a mixing bowl, combine cubed salmon with soy sauce, Kewpie mayo, sriracha, and sesame oil.
- Cut nori sheets into squares that fit muffin tins. Lightly grease muffin tins.
- Layer sushi rice in each nori square, pressing down gently to form cups. Top with the salmon mixture.
- Bake for 15 minutes or until salmon is cooked through and tops are golden brown.
- Garnish with furikake and green onions before serving.
