  • Seeds from a vanilla bean or 1 tablespoon vanilla bean paste
  • 1 cup whipping cream
  • 1/4 teaspoon vanilla flavoring (for mousse topping)
  • 2 tablespoons confectioners’ sugar (for mousse topping)
  • 1/2 cup softened cream cheese (4 ounces, for mousse topping)
  • 4 ounces melted white chocolate baking squares
  • 1 tablespoon confectioners’ sugar (for mousse topping)
  • Seeds from a vanilla bean or 1-2 teaspoons vanilla bean paste (for mousse topping)

Instructions

  1. 1. Preheat the oven to 350°F (175°C). Combine crust ingredients and press into a springform pan. Bake for 10 minutes and cool.
  2. 2. Beat filling ingredients until smooth and pour over the cooled crust; bake for 28 minutes. Let cool in the oven for an hour.
  3. 3. Whip cream for the mousse topping until soft peaks form; fold in melted white chocolate and cream cheese mixture. Spread over cooled cheesecake.
  4. 4. Refrigerate for at least two hours before serving.
