  • 4 large flour tortillas
  • 8 slices provolone cheese
  • 12 ounces deli roast beef
  • 1 cup French fried onions
  • 2 tablespoons extra virgin olive oil
  • 1 can beef consommé
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons low sodium soy sauce
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Lay a tortilla flat and place 2 slices of provolone cheese over half. Add roughly 3 ounces of roast beef and a handful of French fried onions. Brush the edge with olive oil.
  3. Roll the tortilla tightly from the filled end and seal the edge. Place seam-side down on the baking sheet and repeat with remaining tortillas.
  4. Brush tops of each roll lightly with olive oil for crispiness.
  5. Bake for 8–10 minutes until golden brown and cheese is bubbly.
  6. While baking, prepare au jus by combining all ingredients in a saucepan over medium heat; whisk until hot.
  7. Let roll ups rest for 2 minutes before slicing and serving with warm au jus.
