  • 1/2 cup all-purpose flour
  • 1/3 cup potato starch
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon five spice powder
  • 3/4 cup cold sparkling water
  • Neutral oil (for frying)
  • Salt (for seasoning)
  • Furikake (for seasoning)

Instructions

  1. Prepare the enoki mushrooms by trimming the base and slicing them into thin layers.
  2. Heat about 2–3 inches of neutral oil in a heavy-bottomed pot to 375°F (190°C).
  3. In a mixing bowl, whisk together flour, potato starch, baking powder, salt, and spices. Gradually add cold sparkling water until you achieve a smooth batter.
  4. Dredge each mushroom slice in the batter, allowing excess to drip off.
  5. Fry in batches for 1–2 minutes until golden brown and crispy.
  6. Remove with a spider strainer and place on a wire rack to drain excess oil. Season immediately with salt and furikake.
