  • 2 heads garlic
  • 1 teaspoon olive oil
  • 8 ounces cream cheese, room temperature
  • 1 cup sour cream
  • 4 ounces shredded mozzarella cheese
  • ½ cup grated parmesan cheese, divided
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon fresh chopped parsley, for garnish
  • crostini or crackers, for serving

Instructions

  1. Preheat your oven to 400°F. Trim the tops of the garlic heads and drizzle with olive oil. Wrap in foil and roast for about 50 minutes until soft.
  2. Lower the oven temperature to 350°F. Once cooled, squeeze the roasted garlic into a mixing bowl and mash into a paste.
  3. Mix in cream cheese and sour cream until smooth. Stir in mozzarella, half of the parmesan, salt, and pepper.
  4. Spread the mixture in a baking dish and top with remaining parmesan cheese.
  5. Bake for approximately 28 minutes until bubbling and golden on top. Let cool for five minutes before garnishing with parsley.
