  • 1 bell pepper
  • 2 cups romaine lettuce or spinach
  • ½ cup plain Greek yogurt
  • Lime juice

Instructions

  1. In a bowl, whisk together olive oil, lime juice, chili powder, smoked paprika, garlic, salt, and pepper. Marinate the chicken for 20–30 minutes.
  2. Heat the grill over medium-high heat and cook the marinated chicken for 5–6 minutes on each side until it reaches an internal temperature of 165°F. Let rest before slicing.
  3. Grill corn until charred (8–10 minutes), then cut kernels off the cob.
  4. Toss grilled corn with cumin, cayenne pepper, cilantro, and lime juice in a bowl.
  5. In another bowl, mix Greek yogurt with lime juice, olive oil, honey (if desired), salt, pepper, and garlic powder.
  6. Assemble bowls by layering romaine or spinach with sliced chicken, corn mixture, cherry tomatoes, red onion, and bell pepper. Drizzle with yogurt dressing.
