  • 1 tsp lemon juice
  • 2 tsp powdered gelatin
  • 2 tbsp cold water
  • ½ cup heavy whipping cream, cold
  • ½ cup white chocolate chips or chopped white chocolate
  • ⅓ cup sweetened condensed milk
  • ½ cup granulated sugar (for mirror glaze)
  • ¼ cup water
  • 2 tsp powdered gelatin (for mirror glaze)
  • 2 tbsp cold water (for mirror glaze)
  • Pink or red gel food coloring

Instructions

  1. Make the Raspberry Purée: Cook raspberries, sugar, and lemon juice over medium heat for 5-7 minutes until soft. Strain through a fine sieve and let cool.
  2. Bloom Gelatin: Sprinkle gelatin over cold water in a small bowl; let sit for 5 minutes.
  3. Prepare Mousse: Warm purée slightly and stir in bloomed gelatin. Whip heavy cream to soft peaks and fold gently into the raspberry mixture.
  4. Fill Molds: Spoon mousse into heart-shaped silicone molds and freeze for at least 4 hours.
  5. Make Mirror Glaze: Bloom gelatin again; heat sugar, condensed milk, and water until dissolved. Stir in chocolate and gelatin; cool to about 90°F (32°C).
  6. Glaze Hearts: Remove mousse from molds; pour glaze over each heart on a wire rack. Let set before serving.
