Ingredients
- 1 cup jasmine rice
- 2 tablespoons vegetable oil, divided
- 3 large eggs
- 1 pound boneless, skinless chicken breast, diced
- Salt and black pepper to taste
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon fish sauce
- 4 cloves garlic, minced
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 green onions, chopped

Instructions
- Cook jasmine rice as per package instructions. Spread on a baking sheet to cool.
