- 1 cup cool water, divided
- 1 ½ cups granulated sugar
- 1 cup light corn syrup
- 1/8 teaspoon salt
- 1 tablespoon vanilla extract
- ½ cup powdered sugar, divided
Instructions
- Prepare a greased 9×13 baking dish.
- In a mixer bowl, combine gelatin with ½ cup water; let soak.
- In a saucepan, mix sugar, corn syrup, salt, and remaining water; cook until dissolved then boil for one minute.
- Gradually pour the hot syrup into the gelatin mixture while mixing on low speed. Increase speed to high and whip until thick and fluffy (5-10 minutes). Add vanilla.
- Spread mixture in the prepared dish and sprinkle with powdered sugar. Refrigerate uncovered for at least 3 hours or overnight.
