  • 0.25 cups granulated sugar
  • 6 tablespoons melted butter
  • 1 cup fresh or frozen raspberries
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice
  • 12 ounces white chocolate
  • 24 ounces cream cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 0.25 cup heavy cream
  • Extra raspberry sauce or fresh berries (for garnish)

Instructions

  1. Preheat oven to 325°F (163°C). Combine graham cracker crumbs, sugar, and melted butter in a bowl; press into the bottom of a springform pan and bake for 10 minutes.
  2. In another bowl, mix raspberries with sugar and lemon juice; gently mash to release juices.
  3. Melt white chocolate using a double boiler or microwave until smooth; set aside.
  4. Beat cream cheese until creamy; gradually add sugar, then eggs one at a time. Stir in vanilla extract, sour cream, heavy cream, and melted white chocolate until smooth.
  5. Pour half of the batter into the crust, top with raspberry filling, swirl gently, then pour remaining batter on top.
  6. Bake for about 70 minutes until set but slightly jiggly in the center; cool gradually in the oven with the door ajar.
  7. Refrigerate for at least 4 hours before serving; garnish with extra raspberry sauce or fresh berries.
