Instructions
- Preheat oven to 325°F (163°C). Combine graham cracker crumbs, sugar, and melted butter in a bowl; press into the bottom of a springform pan and bake for 10 minutes.
- In another bowl, mix raspberries with sugar and lemon juice; gently mash to release juices.
- Melt white chocolate using a double boiler or microwave until smooth; set aside.
- Beat cream cheese until creamy; gradually add sugar, then eggs one at a time. Stir in vanilla extract, sour cream, heavy cream, and melted white chocolate until smooth.
- Pour half of the batter into the crust, top with raspberry filling, swirl gently, then pour remaining batter on top.
