  • 1 lb pasta (rotini or penne)
  • 1 cup marinated artichokes
  • 1 cup black olives
  • 1 cup stuffed green olives
  • 1 cup pepperocini
  • 1 cup diced ham
  • 1 cup salami
  • 1 cup thinly sliced onion
  • 1 cup grated Parmesan cheese
  • ½ cup chopped fresh parsley
  • 3/4 cup olive oil
  • 1/4 cup rice wine vinegar
  • 1/4 cup lemon juice
  • 1 teaspoon garlic – minced
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon salt

Instructions

  1. Cook the pasta according to package instructions in a large pot of boiling water. Drain and rinse under cold water.
  2. While pasta cooks, chop the marinated artichokes, olives, pepperocini, ham, and salami.
  3. In a jar with a lid, combine olive oil, rice wine vinegar, lemon juice, minced garlic, onion powder, oregano, basil, red pepper flakes, and salt. Shake well until emulsified.
  4. In a large mixing bowl, combine the cooked pasta with all chopped ingredients. Pour half of the dressing over the salad and toss gently to combine.
  5. Sprinkle with parsley and Parmesan cheese. Add remaining dressing as needed and mix well before serving.
