  • 7 or 8 smallish strawberries (thinly sliced)
  • 2 1/2 cups chopped strawberries
  • 1/4 cup plus 2 tbsp water (divided)
  • 1 tbsp grassfed gelatin
  • 3/4 cup heavy whipping cream
  • 1 tsp vanilla extract
  • 16 ounces cream cheese (softened)
  • 1 cup powdered Swerve Sweetener
  • 1/3 cup heavy whipping cream
  • 1 1/2 ounces unsweetened chocolate (chopped)
  • 2 tbsp powdered Swerve Sweetener
  • 1 tbsp allulose (or BochaSweet)
  • 1/2 tsp vanilla extract

Instructions

  1. Prepare the crust by mixing almond flour, cocoa powder, Swerve Sweetener, and salt in a food processor. Add melted butter and pulse until combined. Press into a greased 9-inch springform pan.
  2. For the filling, bloom gelatin in water, then mix softened cream cheese with powdered Swerve Sweetener until smooth. Whip heavy cream until stiff peaks form and fold into the cream cheese mixture along with dissolved gelatin.
  3. Layer sliced strawberries over the crust and pour cheesecake filling on top, smoothing with a spatula.
  4. For ganache, heat heavy cream until simmering, stir in chopped chocolate until melted, then mix in sweeteners.
  5. Pour ganache over the cheesecake and refrigerate for at least 4 hours before serving.
