Description

  • 1 tsp cornstarch
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 1½ cups granulated sugar
  • 3 small or medium lemons, zested (or 2 large lemons)
  • 1 cup unsalted butter, melted
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries
  • ¼ cup granulated sugar for rolling (optional)

Instructions

  1. Preheat your oven to 375 F (190 C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt.
  3. In another bowl, combine the sugar and lemon zest until it resembles wet sand. Add melted butter, egg, and vanilla extract; mix well.
  4. Gently fold in the dry ingredients until just combined. Carefully add in the blueberries.
  5. Scoop cookie dough onto the prepared baking sheet about 3 inches apart.
  6. Bake for 10-12 minutes until edges are set and lightly golden brown.
  7. Allow cooling for a few minutes on the baking sheet before transferring to a wire rack.
