  • ½ cup granulated sugar
  • ½ cup light brown sugar (packed)
  • 12 tablespoons unsalted butter (melted and cooled)
  • 1 can (14 ounces) sweetened condensed milk
  • 4 large egg yolks (room temperature)
  • ⅔ cup fresh lemon juice (about 45 lemons)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. For the crust, mix flour, granulated sugar, brown sugar, salt, and baking powder in a bowl. Stir in melted butter until crumbly. Press into a greased 9×13 inch baking dish.
  3. Bake for about 15 minutes until lightly golden. Let cool slightly.
  4. In another bowl, whisk together sweetened condensed milk, egg yolks, heavy cream, salt, and fresh lemon juice until smooth.
  5. Pour filling over the cooled crust and bake for an additional 30 minutes until set.
  6. Allow to cool completely before cutting into squares.
