  • 4 large eggs (separated)
  • ¾ cup granulated sugar
  • Zest of 2 lemons
  • 2 tbsp lemon juice
  • ¼ cup limoncello liqueur
  • 8 oz mascarpone cheese
  • 1 cup heavy cream
  • ½ cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a bowl, whisk together flour and baking powder; set aside.
  3. Beat egg whites until soft peaks form; set aside.
  4. In another bowl, beat egg yolks with granulated sugar until pale, then add lemon zest, lemon juice, and limoncello.
  5. Fold dry ingredients into the egg yolk mixture, then gently fold in beaten egg whites until just combined.
  6. Divide batter between prepared pans and bake for 22–25 minutes. Cool completely.
  7. Prepare limoncello syrup by simmering limoncello, water, and sugar in a saucepan until dissolved; let cool.
  8. Brush cooled cake layers generously with limoncello syrup.
  9. For the filling, beat mascarpone until smooth, then mix in heavy cream, powdered sugar, and vanilla until fluffy.
  10. Assemble the cake by layering the sponge with mascarpone filling between each layer and refrigerate for at least four hours before serving.
