  • 1 cup blanched almond flour
  • 1/2 tsp salt
  • 1 cup unsalted butter (room temperature)
  • 1/2 cup powdered sugar (plus more for dusting)
  • 1/3 cup packed light-brown sugar
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 2/3 cup thick fruit jam

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, almond flour, and salt.
  3. In a stand mixer, cream the butter with powdered and brown sugars until smooth. Add egg yolks and extracts; mix well.
  4. Gradually add dry ingredients until combined. Chill the dough for about an hour.
  5. Roll out the dough to 1/6-inch thickness and cut shapes using cookie cutters.
  6. Bake for 9-11 minutes until just golden on the edges.
  7. Once cooled, assemble cookies by spreading jam on whole cookies and dusting cut-out cookies with powdered sugar.
