  • 1 cup sour cream
  • 4 large eggs
  • Zest of 1 lemon
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup fresh raspberries

Instructions

  1. Prepare the raspberry swirl by simmering raspberries, sugar, and lemon juice in a saucepan for 5-7 minutes until thickened. Strain to remove seeds.
  2. Preheat the oven to 325°F (163°C).
  3. Make the crust by combining graham cracker crumbs, sugar, and melted butter. Press into a springform pan and bake for 8-10 minutes until golden brown.
  4. In a mixing bowl, beat cream cheese until smooth. Gradually add sugar, then mix in sour cream, lemon zest, lemon juice, and vanilla extract. Add eggs one at a time on low speed.
  5. Pour cheesecake filling over the cooled crust and swirl in raspberry sauce.
  6. Bake for 55-65 minutes or until set but slightly jiggly in the center. Cool gradually in the oven before refrigerating for at least 4 hours.
