Description

Ingredients

  • 2 cups sushi rice
  • 1 large mango (diced)
  • 1 14-oz can coconut milk
  • 1 cup water
  • 1 1/4 teaspoon salt

Instructions

  1. Rinse sushi rice under cold water until the water runs clear to remove excess starch.
  2. In a pot, combine rinsed rice, water, and salt. Bring to a boil over medium heat, then cover and simmer on low for about 20 minutes or until water is absorbed.
  3. While rice cooks, heat coconut milk in a separate saucepan over low heat, stirring occasionally until warm (do not boil). Reserve half for drizzling later.
  4. Once rice is done, turn off heat and stir in the remaining coconut milk. Let sit covered for an additional 10 minutes.
  5. Fluff the sticky rice with a fork and serve warm topped with diced mango and a drizzle of reserved coconut milk.
