- 1 large mango (diced)
- 1 14-oz can coconut milk
- 1 cup water
- 1 1/4 teaspoon salt
Instructions
- Rinse sushi rice under cold water until the water runs clear to remove excess starch.
- In a pot, combine rinsed rice, water, and salt. Bring to a boil over medium heat, then cover and simmer on low for about 20 minutes or until water is absorbed.
- While rice cooks, heat coconut milk in a separate saucepan over low heat, stirring occasionally until warm (do not boil). Reserve half for drizzling later.
- Once rice is done, turn off heat and stir in the remaining coconut milk. Let sit covered for an additional 10 minutes.
- Fluff the sticky rice with a fork and serve warm topped with diced mango and a drizzle of reserved coconut milk.
