  • 200 g strawberries (hulled and halved)
  • 15 g sugar
  • 397 g condensed milk (1 can)
  • 240 g mascarpone cream (room temperature)
  • 360 ml double cream (cold)
  • 1 tsp vanilla extract
  • ¼ tsp fine salt

Instructions

  1. Prepare the Strawberry Sauce: In a saucepan, combine hulled strawberries and sugar over medium heat. Cook for about 10 minutes until softened. Let cool.
  2. Make the Ice Cream Base: In a mixing bowl, blend room temperature mascarpone and condensed milk until smooth. In another bowl, whip cold double cream to stiff peaks, then fold into mascarpone mixture.
  3. Swirl in Strawberry Sauce: Layer half of the ice cream mixture in a freezer-safe container, drizzle half of the cooled sauce on top, add remaining ice cream, followed by more sauce. Gently swirl together.
  4. Freeze: Cover tightly and freeze for at least 6 hours or until fully set.
