  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1/2 cup plain Greek yogurt
  • Juice of 1 lemon
  • 1/2 cup diced tomatoes
  • 1/2 cup diced cucumber
  • 1/4 cup red onion, finely chopped
  • 1/4 cup kalamata olives, pitted and sliced
  • 1/4 cup crumbled feta cheese
  • 8 small corn tortillas

Instructions

  1. Marinate the chicken by mixing olive oil, minced garlic, oregano, cumin, salt, and pepper in a bowl. Add the chicken breasts and coat well. Let marinate for at least 30 minutes.
  2. Cook the chicken in a preheated grill or skillet over medium-high heat for about 6-7 minutes on each side until cooked through. Let it rest before slicing thinly.
  3. In a small bowl, mix Greek yogurt with lemon juice to create the sauce.
