Ingredients

  • 1 tablespoon olive oil
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 4 small pita breads
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup diced cucumbers
  • 1/4 cup diced red onions
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons tahini sauce

Instructions

  1. In a non-stick pan over medium heat, add olive oil and cooked chickpeas. Season with cumin, paprika, and salt; cook for 5–7 minutes until slightly crispy.
  2. Warm pita breads in a toaster or oven for about 1–2 minutes.
  3. On each warmed pita, distribute the chickpea mixture evenly.
  4. Top with shredded lettuce, diced tomatoes, cucumbers, red onions, crumbled feta cheese, and drizzle with tahini sauce.
  5. Fold gently to form tacos and serve immediately.
