  • 2 tablespoons olive oil
  • 1 lemon (juiced and zested)
  • 1 can (14 oz) artichoke hearts (drained and quartered)
  • 1/2 cup pitted green olives (halved)
  • 1/2 cup chicken broth
  • 1/4 cup white wine (optional)
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts with salt, pepper, oregano, basil, and garlic powder.
  3. Heat olive oil in a skillet over medium-high heat; sear chicken until golden brown on both sides.
  4. Remove chicken from skillet; sauté sliced red onion and minced garlic in the same skillet until aromatic.
  5. Add artichokes and olives; cook for another 2 minutes.
  6. Pour in chicken broth, white wine (if using), lemon juice, and zest; bring to simmer.
  7. Return chicken to skillet and spoon some sauce over it.
  8. Transfer to the oven; bake for 20-25 minutes until internal temperature reaches 165°F.
  9. Garnish with fresh parsley before serving.
