- 1 lemon (juiced and zested)
- 1 can (14 oz) artichoke hearts (drained and quartered)
- 1/2 cup pitted green olives (halved)

- 1/4 cup white wine (optional)
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon garlic powder

Instructions
- Preheat oven to 375°F (190°C).
- Season chicken with salt, pepper, oregano, basil, and garlic powder.
- In a cast iron skillet, heat olive oil over medium-high heat and sear chicken for 3-4 minutes on each side until golden brown.
- Remove chicken and sauté red onion and garlic in the same skillet for 2 minutes.
- Add artichokes and olives; cook for another 2 minutes.
- Pour in chicken broth, white wine (if using), lemon juice, and zest; bring to a simmer.
- Return chicken to skillet and spoon sauce over it.
- Bake for 20-25 minutes until chicken is cooked through.
