  • 1 lb pasta (penne, rotini, or farfalle)
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumbers
  • 1/2 cup kalamata olives, halved
  • 3/4 cup crumbled feta cheese
  • 2 tbsp chopped fresh parsley
  • 2 tbsp torn fresh basil
  • 1/3 cup extra virgin olive oil
  • 2 tbsp red wine vinegar or lemon juice
  • 1 garlic clove, minced
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. Prepare the vegetables: halve tomatoes, dice cucumbers, slice onion, and halve olives.
  3. In a small bowl, whisk together olive oil, vinegar (or lemon juice), minced garlic, salt, and pepper.
  4. In a large mixing bowl, combine cooled pasta with prepared vegetables and vinaigrette; toss well.
  5. Gently fold in feta cheese and herbs; refrigerate for at least 30 minutes before serving.
