- 4 2/3 cups Rice Krispies cereal
- 4 tablespoons salted butter
- 10 ounces marshmallows
- 1 teaspoon peppermint extract
- Green food coloring (about 10 drops)
- 3/4 cup mini chocolate chips
Instructions
- Grease a large mixing bowl with butter or cooking spray.
- Pour the Rice Krispies cereal into the bowl and set aside.
- Melt the salted butter in a medium-large saucepan over low heat.
- Add marshmallows to the melted butter, stirring until about three-quarters are melted.
- Remove from heat and stir until fully melted and smooth.
- Mix in peppermint extract and green food coloring until combined.
- Pour the marshmallow mixture over the Rice Krispies, gently tossing to coat.
- Let cool for 5–8 minutes, then fold in most of the mini chocolate chips.
- Press the mixture into a greased 8-inch pan, topping with reserved chocolate chips.
- Allow to cool at room temperature for at least 30 minutes before cutting into squares.
